Thursday the 10th of September - An Unforgettable Autumn Dining Experience with Julian Ankers

Introducing a new chef to the Secret Table. We are delighted to welcome the founder of The Cumbrian Chef, Julian Ankers to our kitchen to showcase his passion for seasonal, locally sourced Cumbrian ingredients.

Julian’s culinary journey began in Staffordshire, where he owned a restaurant in Eccleshall for 14 years. In the early 2000s, he moved to the Lake District with his young family, eager to embrace a new life in this stunning landscape. Building on his experience he launched a fine dining restaurant in Kendal, where he worked for seven years before moving to Lancaster University to take on the role of Executive Chef.

Now, Julian has poured all of his passion and experience into founding The Cumbrian Chef, a private dining company that brings restaurant-quality cuisine to life using the finest local produce from trusted suppliers like Cartmel Game, Higginson’s Butchers, Caterite Food Service, Winter Tarn Dairy, and Stonehouse Smokery.

Canapes

Starter – Twice-Baked Cheese Soufflé
Chef says: “A light and airy twice-baked soufflé crafted with Torpenhow farmhouse cheese, elegantly garnished with autumn leaves and drizzled with a honey mustard dressing, celebrating the flavours of the season.”

Main Course – Caramelized Duck Breast
Chef says: “Succulent caramelized duck breast served atop a smooth celeriac purée, accompanied by roasted squash and crispy kale, finished with a rich port and blackberry reduction for a harmonious blend of flavours.”

Dessert – Keswick Codlin Apple Tarte Tatin
Chef says: “A delightful Keswick Codlin apple tarte Tatin, served warm with a luscious caramel and vanilla sauce, complemented by a scoop of clotted cream ice cream for the perfect autumn indulgence.”
